you possess a holy ambition* to find imaginative ways to serve others?
If
so and you are a teen or young adult between 13 and
21 years old, we
would like to invite you to consider a two week internship (actual
timing usually involves about 18 days) in Sue
Gregg's kitchen.
What
does an internship involve?
An internship is a two-week (10 days in the kitchen) course that focuses on healthy
whole foods cooking and serving others. During the course we will
prepare 13 model menus (includes preparing about 25 recipes). As you
learn the basic nutritional information that supports the quality
ingredient choices for the recipes, you will also compare meal costs and
meal nutrition.
You will engage in six 30 minute group Bible studies in the gospels of
John and Luke focusing on food and hospitality.
You will practice proper and attractive table settings and gain
experience in different styles of table service. At the table you can
observe and engage in purposeful conversations. We will prepare and
serve a multi-course meal for specially invited guests. You will
maintain an orderly kitchen and practice creating an attractive,
hospitable home environment for guests. You will be
challenged to explore imaginative and creative ways of serving and
teaching others.
Sometime during the two weeks we will pack a picnic lunch for a day outing to
explore a Southern California scenic wonder.
How do I prepare for an internship?
The best way to prepare for an internship is to become thoroughly
familiar with the SueGreggCookbooks and to prepare as many recipes as
possible from them, ideally over a period of at least a year. During
that time you should complete the first and second semesters of the
curriculum (Baking with Whole Grains plus Introducing Whole Foods
Cooking that includes meal preparation and menu planning).
What does an internship cost?
The fees for a 10 day internship are $1000 per person. The actual
timing of the program usually runs from a Wednesday or Thursday with
orientation and kitchen classes running Monday through Friday for two
weeks. Departure is usually on the Saturday or Sunday following.
Are
scholarships available? Scholarships worth up to $500 are
available as follows: Completing Baking with Whole Grains Baking
course=$150, preparing recipes in the Introducing Whole Foods Cookbook
25 recipes @$3.00 each = $75. Work study program in office or household
at the Gregg's home. chores =$225. Other: Service activities: working at
a SueGreggCookbooks convention booth, teaching whole foods cooking
class, practicing hospitality =$35 to $100.
What course materials are required? Each student must own her/his
own Basic Set of the current editions of the SueGreggCookbooks. (Cost
$99)
Is there training available beyond the two week internship?
Yes, students who are invited to serve longer terms as apprentices engage in
recipe testing, managing recipe preparation and service for catering and
guest meals,
training interns, and cookbook publishing.
What is an apprenticeship?
An apprenticeship provides a longer term but slower paced work/study
experience open to young adults 18 and older. The cost is $1000 per
month; however, this fee can be earned back by 4 hours work (e.g.
kitchen, household & yard, office) 5 days per week @$12 per hour.
Students have time to continue independent studies (e.g. internet
classes) or work projects that advance them toward a specific goal (e.g.
college degree). Continuation of the program is determined on a month by
month basis.
Is there training for adults over 26?
Yes, such training is usually designed to meet a specific goal and
can be arranged to accommodate a family California vacation.
Parents: Do consider our home a "home away from home," a
transition place where your offspring can "try their wings,"
learn to "own" and practice the values of Jesus' followers by
their own free choice, before you launch them out on their own. Do ask us
for references from former interns and their parents. And do explore what
